DIY Giant McChicken

McDonald’s classic dollar menu may not be a dollar any more but the list of favorite sandwiches definitely has the McChicken on it. The McChicken is an all time classic quick on the go snack that has been picked up at the drive thru for ages.  So many times we’ve had it and thought to ourselves, “Maybe I should have ordered more.”

Well today, thanks to the internet, you can feast your eyes and your stomachs on your very own version of a glorious oversized McChicken sandwich.

Ingredients:

Over sized Roll Recipe:


  • 1 PKT Active Dry Yeast
  • 1 cup Warm Water
  • 1⁄3 Cup Vegetable Oil
  • 1⁄4 Cup Sugar
  • 1 Lg Egg
  • 1 tsp Salt
  • 3 -3 1⁄2 cup White Wheat Flour

Chicken Patty:


  • 2 lbs Chicken Breast
  • 2 lbs Chicken Thighs

Chicken Batter:


  • 1 Eggs
  • 1 Cup Water
  • ⅔ Cup Flour
  • ⅓ Cup Italian Bread Crumbs
  • 2½ tsp Salt
  • 1 tsp Onion Powder
  • ¼ tsp Black Pepper
  • ⅛ tsp Garlic Powder

Toppings:


  • Head of Iceberg (Cut into Thick "Shreds")
  • ¼ Cup Mayonnaise

THINGS YOU'LL NEED:



Instructions:


  1. Start by grinding your chicken thighs and breasts. Keep the measurements to 50/50. After ground, on a cutting board lined with parchment paper, shape your chicken into the shape of the McChicken chicken patty and freeze for 1 hour.
  2. While freezing, start preparing your bread by dissolving your yeast in warm water. After dissolved, add oil and sugar and let stand for about 5 minutes.
  3. Then add your egg, salt and your flour. Blend in stand mixer until your dough is formed. Roll out onto a floured surface and knead for 3 minutes, until elastic.
  4. Place in a bowl, add oil to both sides, cover with a wet towel, and set by a warm surface for 1 hour to rise on it's prepared baking sheet and in cake mold.
  5. Bake at 425°F for 45 minutes or until golden brown with an internal temperature of 200°F.
  6. Remove from pans to wire rack to cool. Once cool cut into two pieces and set aside until ready to toast for the build.
  7. While rising and baking your bun, batter your chicken patty. Set your breading station with 3 bays. Flour with salt and pepper, 2 eggs with salt and pepper, and seasoned flour with Italian bread crumbs, salt, onion powder, black pepper, and garlic powder. Bread with plain flour, egg, then seasoned flour and freeze for 30 minutes to an hour.
  8. Preheat deep fryer to 350°F. Deep fry for 8-10 minutes. Bake until cooked through with an internal temperature of 165°F.
  9. Build your McChicken upside down on tinfoil. Top bun, mayo, shredded lettuce, chicken, bottom bun, and wrap the tin foil around, then flip.
  10. Slice into 8-12 pieces to share at a party or enjoy it all to yourselves!
