So I went home for the holiday’s to Rochester, NY where the snow falls and the winter looks like winter.  I decided why not warm up the house with a giant potato skin made from several potato skins.  It would be the best dish to serve at my mom’s party.  But alas, no one came to her party…  Not 1 person…  This was great news because I didn’t want to share this thing anyway.

Ingredients
  • 8 Medium Russet Potatoes
  • 4 TGI Friday's Frozen Potato Skins
  • Shredded Mozzarella Cheese
  • Shredded Cheddar Cheese
  • Bacon
  • Chives / Scallions
  • Sour Cream
  • Milk
  • Butter
  • Garlic Powder
  • Salt & Pepper
Instructions
  1. Wash potatoes, stab with fork and microwave 4 at a time for 10-12 minutes on high
  2. Cut in half, scoop out potatoes and use just the skin to form your giant potato skin
  3. Line a bowl with tin foil and oil and place skins down until you cover the entire bowl
  4. With the excess potatoes, make a potato paste with them using cheese, milk, and seasonings
  5. Bake TGI Friday's potato skins as an optional filler for your giant potato skin
  6. Spread the potato paste onto the skins and form a bowl where you can place the TGI Friday's potato skins (baked)
  7. Cover the entire thing with shredded cheddar cheese and diced cooked bacon
  8. Bake the entire dish until everything has completely melted
  9. Sprinkle on chives / scallions and serve with a giant bowl of sour cream
