A delicious Potato Skin recipe with garlic mashed potatoes loaded inside of each potato skin topped with a low fat shredded cheese blend, turkey bacon and non-fat Greek yogurt!

Ingredients:
- 3 Large Russet Potatoes
- ⅓ Cup low fat cheddar cheese
- 3 Tbsp (1.5oz) Fat free cream cheese
- 3 Slices Turkey Bacon Low Sodium
- ¾ Cup Skim Milk
- 2 Tbsp Light butter spread
- ½ Tsp Garlic Powder
- ½ Tsp Black pepper
- 3 Tbsp Fat free sour cream
- 1 Cup Shredded lettuce
- ¼ Cup Chives
Instructions:
- Microwave Potatoes for 10-12 minutes. (1100 Watt)
- Cut Potatoes
- Scoop out Potatoes with spoon
- Make mashed Potatoes
- Spray down and bake Potato skins (475F @ 10 minutes)
- Cook turkey bacon
- Fill the Potato skins
- Bake again (475 @ 8 minutes)
- Garnish the plate & serve
