These tacos have been around since the 1950s and have been America's favorite add-on to their orders at Jack In The Box. Today we make them at home because we live in Florida and cannot go and get one.

INGREDIENTS:

  • Corn Tortillas
  • Shredded Iceberg Lettuce
  • American Cheese Slices
  • Oil for Deep Frying

Jack In The Box Taco Meat

  • 1 1b of Ground Beef
  • 1 1b Ground Chicken Thigh
  • 6 Cups Cold Water
  • 2 Cup Soy Protein or Tempeh
  • 4 Tbsp Tomato Paste
  • 2 Tbsp Onion Powder
  • 2 Tbsp Chili Powder
  • 8 Tbsp Corn Flour
  • 4 tsp Salt
  • 2 tsp Accent
  • 2 tsp Garlic Powder
  • 1 1/2 Tbsp Worcestershire
  • 1 tsp Sugar
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cayenne Pepper
  • 2 tsp Citric Acid
Jack In The Box Taco Sauce
  • 1 Cup Cold Water
  • ¼ Cup Chili sauce
  • 2 ½ Tbsp White Vinegar
  • ¼ tsp Worcestershire sauce
  • 1 Tbsp Cornstarch
  • ½ tsp Red Pepper Flakes
  • ½ tsp Season salt
  • 3/8 tsp Garlic Powder
  • ¼ tsp Onion Powder
  • ¼ tsp Black Pepper
  • 1/8 tsp Coriander
  • 1/8 tsp Ground Cumin
  • 1/8 tsp Ground Clove
  • 1/8 tsp Smoked Paprika
Homemade Tortillas:
  • 2 Cups Masa Harina
  • 1 1/2 Cups Water

INSTRUCTIONS:
  1.  Start by making the taco sauce by combining all the ingredients in a small sauce pan and bringing to a boil.  Cool and set aside.
  2.  To make the taco meat combine all the ingredients, except the beef and chicken, into a bowl.  Combine the beef and chicken in a skillet and cook down until brown. Drain out the grease and place back on the heat. Add the seasoning mix, bring to a boil, reduce heat to medium and cook mixture stirring until thickened. Once fully cooked, cool, and put meat in the food processor to create the Jack In The Box meat consistency.
  3. Heat corn tortillas by placing them in a dry skillet over medium heat for 20 seconds per side.  This will make them pliable so they don't rip when we fold them in half.  Wrap them in a dishtowel to keep them warm before ready to use.  Take corn tortillas and place 1 heaping Tbsp of Jack In The Box meat into the center of the shell and fold in half and press down evenly.  Place the taco in a bag and place in the freezer. Repeat.  For small tacos cut small circles out of the tortillas and complete the same steps above.
  4. Heat oil for deep frying to 365°F.  Deep fry each taco for one minute while holding the taco together with tongs. 
  5. Quickly pry the taco open and stuff with half an America cheese slice cut diagonally, taco sauce, and shredded iceberg lettuce. 
Make your Own Tortilla:
  1. Mix the Masa Harina and water together.  Mix until a ball of dough roughly begins to form.  
  2. Kneed the dough with your hands for an additional few minutes until the dough becomes smooth and no longer sticky.  If the dough is too dry add a tsp of water, if it is too wet, add a small sprinkle of masa.  The dough is done with it no longer sticks to your hands.
  3. Cover with a damp paper towel and allow to rest for 20 mins.
  4. Portion out into 2.5oz pieces and roll into a smooth ball. 
  5. Place ball between two sheets of plastic and press into desired thickness and round tortilla using a tortilla press or the bottom of a large heavy skillet. 
  6. Cook the tortilla on a well seasoned griddle or cast iron pan, about 1 minute on each side or just until they start to turn the palest brown possible.  Place under a damp paper towel or dish towel for 5 mins to allow to steam and soften slightly.
  7. Stuff the tortilla as directed above and continue with the recipe.
