The ice cream sandwich is one of our all-time favorite sweet treats. With that, and upcoming National Ice Cream Sandwich Day, we’re ALL IN on creating some delicious ice cream sandwiches starting with the classic ice cream sandwich.

Ingredients:
- 2 cups all-purpose
flour
- 1½ cup cocoa powder
- 1½ tsp baking
powder
- 1½ tsp salt
- 2 cups granulated
sugar
- 3 sticks unsalted
butter, melted and cooled slightly, plus more at room temperature for
the pan
- 4 large eggs
- 4 tsp vanilla
extract
- 1 Gallon Vanilla Ice

Instructions:
- Preheat oven to
350°F.
- Grease rimmed baking
sheet and line it with parchment paper.
- Whisk flour, cocoa
powder, baking powder, and salt together.
- Using a stand mixer
and whisk attachment combine butter and sugar until creamy. Add eggs,
one at a time, and beat until smooth. Beat in vanilla. Add the flour
mixture and beat until combined. Looking for a thick batter.
- Smooth the mixture
into a thin and even layer into your prepared baking sheet. Bake
until cake about 30 minutes. Take out of the oven and let cool
completely.
- Carefully transfer
cake to a cutting board and cut into 2 rectangular pieces. Using the
back of a rounded spoon, indent the cakes to make it look like the
classic ice cream sandwich.
- Place plastic wrap
in a dish, that can fit the size of your cake, and place the first
cake face side down.
- Scoop and place
vanilla ice cream on top and make a smooth thick layer.
- Place the second
cake on top. Wrap securely with parchment paper and freeze for 6 to 8
hours before serving.

down on the counter and put your first "bread" piece face
