DIY GIANT McRIB

Competition is on. Who made the McRib better? Giant or Super Long? It's up to you. Vote on Youtube.

The McRib is an infamous fan favorite from McDonalds that is only available for limited time. The sandwich keeps coming back but when it's not available you guys may find yourself needed the intel of how it's done. Julia went ahead with a recipe totally from scratch with fresh ingredients and JP figured out a way to make this similarly to what McDonalds does.


This recipe is made absolutely from scratch from the pickles to the barbecue sauce to the bread. We even went to a local butcher to pick up locally sourced St. Louis Ribs.

Ingredients:
Barbecue Sauce
  • 1 Lg Onion, finely chopped
  • 8 Garlic cloves, minced
  • 1/2 cup vegetable oil
  • 10 tsp chili owder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tsp fresh ground black pepper
  • 1 pinch cayenne pepper
  • 4 cups ketchup
  • 2 cup brown sugar packed
  • 1/2cup cider vinegar
Pickles
  • 4 Large Pickles
  • 4 Cups Water
  • 2 cups vinegar
  • 2 tbsp kosher salt
  • 1 tsp sugar
  • dill
  • 1 head of garlic, skin removed, cloves smashed
  • peppercorn to taste
Dry Rub
  • 1/3 Cup Paprika
  • 1/3 Cup Brown Sugar
  • 1/4 Cup Kosher Salt Salt
  • 2 tbsp Mustard Seed
  • 1 tsp Black Pepper
  • 1 tbsp Oregano
  • 1 tbsp Coriander
Roll
  • 1 1/2 tsp active dry yeast about 1/4 oz
  • 1 1/2 cups warm water divided
  • 2 tsp sugar divided
  • 2 tbsp olive or vegetable oil
  • 2 tsp kosher salt
  • 2 cups bread flour
  • 2 cups all-purpose flour

THINGS YOU’LL NEED:

Instructions:

  1. Start 1 week in advance by making pickle. Slice cucumbers into 1/2 inch slices and set aside. Place a large pot on the stove top. Pour in water, vinegar, salt, and sugar and bring to a boil. Once the mixture is dissolved through remove from the heat. Add the cucumbers to the jars. Add the dill, garlic, and peppercorns and pour the brine overtop. Seal and refrigerate for 1 week.
  2. Also prepare the barbecue sauce. Place large pot with oil on medium high heat, add onion and cook down, then add garlic. Add seasonings, stir through. Add in ketchup, brown sugar, and cider vinegar and bring to a boil. Reduce heat to low and simmer for 1 hour, uncovered. Cool to room temperature and then refrigerate for at least 24 hours.
  3. Mix together all of the dry rub ingredients and put in a spice grinder to reduce to a powder.
  4. Remove the membrane from the ribs, as seen in the Youtube video, keep the ribs whole. Rub the spice mixture generously.
  5. Place the ribs in vacuum seal bags and add 4 drops of liquid smoke and let rest for a minimum of 4 hours.
  6. Add ribs to water bath and cover with a lid for 12 hours at 165F.
  7. While ribs are in the water bath make the giant McRib roll. In a stand mixer bowl, add yeast to 1/4 cup water and sprinkle in tsp sugar over the mixture. Let sit until foamy. Add remaining 1 1/4 cup water and 1 tsp sugar. Add oil and stir to combine. In a seperate bowl combine salt and flour and add the dry mixture to the wet mixture. Knead using the dough hook for 5 minute, or until smooth and elastic. Grease a large bowl and place the dough into it, cover and let rise until it doubles in size. Punch the dough down, knead, and shape into 2 oversized hoagie rolls, to fit the size of the rack of ribs. Cover again and let rise for about 25 minutes. Bake until golden brown, about 30 minutes. Remove and cool on a wire rack.
  8. Remove ribs from bag and pat dry with paper towels. Preheat oven to 300F. Line a backing sheet with foil and place a wire rack in each. Cook for 20 minutes. Brush ribs with sauce and cook for 10 minutes. Remove and brush another layer of sauce and return to the oven for another 10 minutes. Paint with the sauce one more time before

  1. Microwave the TV dinners to package instructions
  2. Slice loaf
  3. Place rib product on bread.
  4. Place pickles and onion then the top bun.
