DIY Giant Macaroni & Cheese

Bored of the same old mac and cheese recipe?   Oversized noodles are the spin we didn't know we were waiting for.

DIY Giant Macaroni

When you thought it's all been done before we break down the process of pasta making to create our version of the largest macaroni noodle there ever was.  Where pasta making from scratch is time consuming and takes a bit of elbow grease the outcome is far worth the effort kneading the dough. 


Ingredients:

Dough
  • 2 Cups Semolina 
  • 2 Cups All Purpose Flour + Extra for kneading
  • 8 Eggs
  • 1/2 Tsp Salt
Stuffing
  • 1 Pints Ricotta Cheese
  • 1 Cups Shredded Mozzarella
  • 3/4 Cup Parmesan Cheese
  • Salt and Pepper to taste
Tomato Sauce and Water to Bake 

Cheese Sauce
  • 4 Tbsp Butter
  • 4 Tbsp Flour
  • 1 Tsp Onion Powder
  • 1 tsp Mustard
  • 2 Cups Milk
  • 1 Pound Velveeta
  • 1 Cup Cheddar
    THINGS YOU’LL NEED:

    Instructions: 

    1. Make pasta dough by creating a large well out of flour on a clean counter top.  Add eggs to the center and fold the dough together kneading until  the dough comes together and has an elasticity that bounces back.  This is where the love comes in, like an Italian Grandma, kneading and rotating (repeat).  For this much dough it may take roughly an hour.  
    2. Preheat oven to 350°F.
    3. Combine the stuffing mixture including ricotta, mozzarella, parmesan, salt and pepper.
    4. Use a rolling pin to roll out the dough thin and cut into a large crescent shape (as depicted in the Youtube video)
    5. Pipe the mixture into the noodle shape and wrap to close.  Punch the edges to close. 
    6. Place a 1/2 cup of sauce into a cake pan and place stuffed noodle into the pan.  Cover with sauce and bake for 1 hour or until dough is cooked through at 180°F.
    7. While the noodle bakes prepare the cheese sauce by cubing Velveeta and set aside.  Heat small pot to medium high heat.  Melt better.  Add flour, onion powder, and mustard.  Cook for 1-2 minutes.  Gradually add in milk and bring to a boil.  Add cheese and stir until melted through and smooth.  
    8. When the noodle is backed carefully clean off the sauce and pour the make that giant macaroni cheesy!!  Enjoy!!
