DIY Giant Cosmic Brownie

INGREDIENTS:

Brownies:
  • 5 Sticks Unsalted Butter
  • 2 cups Granulated Sugar
  • 1 cup packed Light Brown Sugar
  • 3 cups plus 8 Tbsp Unsweetened Cocoa Powder, sifted
  • 2 tsp Vanilla Extract
  • 8 large Eggs plus 4 Egg Yolks
  • 4 Tbsp Light Corn Syrup
  • 2 2/3 cups AP Flour
  • 4 Tbsp Cornstarch
  • 1 tsp Fine Salt
Frosting:
  • 6 cups Good Quality Semisweet Chocolate Chips
  • 2 cups Heavy Cream
Giant Colored Chocolate Chips:
  • 1 Bag Hershey's Kisses
  • 3 Bags White Melting Wafers
  • Food Dyes, Gel Type
  •      Electric Purple
  •      Electric Blue
  •      Electric Orange
  •      Electric Yellow
  •      Electric Pink
  •      Electric Green

INSTRUCTIONS:

Brownies:
  1. Preheat oven @ 350°F. Line metal baking pan with parchment, spray with cooking spray.
  2. In a large microwave-safe bowl, melt the butter for 2 minutes on high power. 
  3. Stir in the granulated sugar, brown sugar, and cocoa powder.
  4. Let cool slightly before adding in the vanilla, eggs, egg yolk, and corn syrup. Stir until very well combined. 
  5. Add in the flour, cornstarch, and salt and stir until just combined. Don't over mix!
  6. Pour into the prepared pan and bake for 26-30 minutes or until a toothpick inserted in the middle comes out with a few moist crumbs. The brownies will look slightly undercooked.
  7. Let cool completely in the pan before frosting.
Frosting:
  1. Place the cream in a microwave-safe bowl and microwave on high for 3 minutes or until 180 degrees.
  2. Add in the chocolate chips. Let stand for 3 minutes before stirring, Mix until smooth.
  3. Pour over the cooled brownies and smooth evenly.
  4. Refrigerate for at least 2 hours.
Large Colored Chocolate Chips:
  1. Follow melting instructions on bag for the white melting wafers.
  2. Divide the melted white wafers into several different smaller bowls.
  3. Add separate colors of food coloring to each bowl to create the multi colored coatings.
  4. One at a time, Dunk the kisses into the colored coating. Place on a wire rack to drip off excess.
  5. Allow too cool.
  6. Place giant chips on-top of the massive cosmic brownie.
