Wendy’s Ciabatta Bacon Cheeseburger

As long as fast food joints keep coming up with new ideas, the less I have to come up with new ideas.  Another great fast food remake, the Wendy’s gotta ciabatta is only for a limited time so make it at home if you’re too late.

Ingredients:

  • Ciabatta Roll of course - 180 Calories
  • ¼ lb 96% Lean Ground Beef - 130 Calories
  • 1 Slice Asiago Cheese - 40 Calories
  • 1 Tbsp Oven Roasted Tomatoes - 8 Calories
  • 2 Turkey Bacon Slices - 50 Calories
  • 1 Tbsp Rosemary Garlic Aioli - 50 Calories
  • Field Greens, as much as you want - 5 Calories

Aioli Ingredients:

  • ¾ Cup Mayonnaise
  • 3 Garlic Cloves Minced
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Chopped Fresh Rosemary
  • 1 Tsp Lemon Zest

Oven Roasted Tomato Ingredients:

  • 2 Tomatoes
  • Olive Oil
  • Thyme
  • Basil
  • Oregano
  • Garlic
  • Salt & Pepper

THINGS YOU'LL NEED:

Instructions:

Aioli Recipe:

  1. Mix all the ingredients into a bowl and blend
  2. Lemon zest requires a microplane onto a fresh clean lemon
  3. Ensure all ingredients that apply are finely minced
  4. I used an immersion blender, then I poured it into a dish and refrigerated it for the time being

Roasted Tomato Recipe:

  1. Dice up two tomatoes into squares and remove seeds if possible.
  2. Pour them into a bowl and add in the seasonings listed. I just threw them onto a baking pan and sprinkled stuff on, but that didn't work very well. You're probably better off mixing them into a bowl with your hands. This will allow the olive oil to coat the tomatoes completely. I would also recommend using parchment paper to keep the tomatoes from sticking.
  3. With regard to how horribly I did with tin foil and not enough oil on the pan, they still tasted amazing.
  4. The amount of seasonings used is going to be an eyeball guess. You need to have instincts if you're going to make these and you need to trust those instincts.
  5. Bake for 25 minutes at 400°F
