DIY Taco Bell Big Cheez-It Crunchwraps & Tostadas

This recipe is for Giant Cheez-It's but EVEN BETTER Taco Bell gave us the great idea to put that inside of a crunch wrap supreme. Eat it as a giant cracker or enjoy it with the flavor of Taco Bell, you're going to have a good time.

THINGS YOU'LL NEED:

  • Kitchen Aid Stand Mixer with Paddle Attachment
  • Baking Sheet
  • Silicone Mat
  • Frying Pan

INGREDIENTS:

Cheez-It Dough (makes 2 Big Cheez-its 8inches by 8 inches)

  • 16 ounces sharp cheddar cheese, shredded
  • 8 tablespoon unsalted butter, room temperature
  • 2 teaspoon salt
  • 2 cups  all purpose flour
  • 4 tablespoons ice water
  • Neon Orange Food Gel
If you are making the crunchwrap make the crackers 4inches by 4 inches. 

Crunchwrap
  • Extra Large Burrito Tortillas
  • Shreddd romain lettuce
  • diced Tomato
  • Shredded Cheese
  • sour cream
  • Cheezit (recipe below)
  • Taco Bell Seasoned Beef
  • Nacho Cheese Sauce
  • Oil for Pan Frying

INSTRUCTIONS:
  1. In the bowl of a stand mixer fitted with the paddle attachment, mix the cheddar, butter, neon orange food gel, and salt until soft and homogenous. 
  2. Add the flour and mix on low speed; the dough will be dry and pebbly. 
  3. Slowly add the water and continue to mix as the dough collects into a mass. 
  4. Pat the dough into a flat disk, wrap tightly with plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 375 F. Line one baking sheet with parchment paper or silicone mats.
  6. Using a rolling pin roll out the cracker to a 1/4 inch thickness and then transfer to the baking sheets. 
  7. Use the tip of a chopstick to punch a hole into the center of each square, and add the edges to make it look like a cheez-it cracker.
  8. Bake for about 30 minutes or until the crackers are puffed and browning at the edges. 
  9. Immediately move the crackers to racks to cool. Let set and then build your Taco Bell Crunchwrap or Tostada. Enjoy!
