- To make homemade french fries simply slice up your russet potatoes and have them soak in ice water to rinse off excess starch and keep them crispy
- Dry them off well and deep fry them for about 4 minutes, freeze them for later and then deep fry them again for 6 minutes. This will give you that crispy fry if that's what you desire. If you don't mind a soft soggy fry then just deep fry once for about 4-10 minutes depending on the thickness. Season well with salt & pepper immediately after removing from deep fryer so the grease can help the seasoning cling to it.
