Recipe type: Appetizer
Cuisine: Hawaiian
Serves: 2
Ingredients
  • 1 Pineapple
  • 1 lb Sushi Grade Ahi Tuna
  • 3 Tbsp Sesame Oil
  • 1 Tbsp Rice Wine Vinegar
  • ¼ Cup Soy Sauce
  • 1 tsp Garlic Powder
  • 1 Tbsp Minced Ginger
  • 1 Tbsp Black Sesame Seeds
  • 1 Tbsp White Sesame Seeds
  • 4 Green Onions, Chopped
  • 1 Lg Avocado, Large Dice
Pineapple Bowl Fixings
  • 1 Seedless Cucumber, Cut into half moons
  • 3 Green Chilis or Jalapeños, Sliced
  • Sticky Rice
  • Sriracha
  • Sriracha Mayo
Instructions
  1. Start by whisking together sesame oil, rice wine vinegar, soy sauce, garlic powder, and black and white sesame seeds in a bowl. Stir in chopped green onion.
  2. Cut the tuna into a large dice and pour the sauce overtop and combine. Cover and refrigerate for at least 10 minutes.
  3. While the tuna marinades prep your toppings. Cut pineapple in half longwise. Cut and scoop out the pineapple. (What regularly will be discarded will become your bowl for the Pineapple Poke.)
  4. Cut cucumber, green chilis, and avocado. Set aside.
  5. Cook sticky rice.
  6. Build a bowl. With this feel free to add your favorite fixings. Start with a layer of rice. Then layer in tuna, avocado, pineapple, cucumber, and green chilis. Top off with Sriracha mayo and sprinkle on sesame seeds.
  7. Pick up your pineapple poke, grab some chopsticks, and dig in. This may be one of the healthiest dishes we've ever made.
