Ice Cream Inside A Marshmallow

We experienced ice cream inside of a marshmallow at a local food truck in Orlando and from that, we were determined to figure out how to make it.   Ice cream should be inside of marshmallows.  The taste of the ooey gooey roasted marshmallow with the cold ice cream inside is one of the tastiest desserts ever.  We highly recommend you make this at home or search out for Sugar Rush food trucks because everyone should experience this sweet treat.

Ingredients:



  • Vegetable oil
  • 3 cups sugar
  • 1½ cups confectioners sugar
  • ¼ tsp salt
  • 4 envelopes gelatin
  • 1¼ cups light corn syrup
  • 2 tsp vanilla extract
  • Ice cream of choice: Oreo ice cream, mint chocolate chip, chocolate
  • Cookie or cracker of choice: Oreos, graham crackers
  • Edible chocolate chip cookie dough
  • Hershey’s chocolate

Instructions:



  1. Crush your cookies and/or crackers. We used Oreos and Graham Crackers.
  2. Scoop ¼ cup balls of your favorite ice cream. We used chocolate, mint chocolate chip, and oreo.
  3. Wearing gloves press the cookies into the ice cream balls. Put a skewer into the center of the ice cream balls and place in the freezer to firm up.
  4. Prepare your tray for your marshmallows by brushing with vegetable oil. Set aside.
  5. In a saucepan on high heat add sugar, salt, light corn syrup, and water to a boil. Using a candy thermometer bring to 238F.
  6. While heating the syrup bloom gelatin in your stand mixer bowl. Sprinkle 4 packets of gelatin on top of ¾ cup cold water. This takes 5 minutes.
  7. Once the syrup is to temperature, mix the bloomed gelatin to break it up. Then while the mixer is on medium speed, carefully pour the syrup into the mixer. Once the heat dissipates put the speed on high for about 12 minutes.
  8. Carefully pour the mixture into your prepared sheet halfway full. Spread the marshmallow evenly in a bottom layer. Place prepared ice cream into the tray and pour more marshmallow on top to seal it in. Place in the freezer for 3 hours.
  9. Take out of the freezer, torch, and enjoy!!
